Sweet Potato Noodles & Tomato Pesto Chicken with the Kenwood Spiralizer

The Spiralizer is all the go apparently. I will be honest with you. I’m not a cook, in the slightest – a bit of a ping chef if I’m honest, and I’ll openly admit that. I’m not your typical housewife, I never will be. But when AO.com got in touch with me to ask me to trial the Kenwood Spiralizer, with the hubby in the middle of a health kick, I thought I would try and unleash an inner cookery goddess!

The Spiralizer is a pretty impressive piece of kit. It looks like a food processor but it actually finely cuts fruit and vegetables into these fantastic spirals of wonderfulness!

My challenge, set by AO.com was to create a meal that was healthy, yet tasty and fun to do. Of course, I turned to the hubby to see what he thought and between us, we came up with this little concoction.

Sweet Potato Noodles & Tomato Pesto Chicken

We shredded the sweet potatoes, the carrots and the courgette (not pictured). This didn’t take any time at all and was actually a lot of fun. The Little Man was also very impressed! We call it spiralized vegetables, he calls them curly vegetables! Gotta love kids!

We prepared the chicken in foil and cooked it in the oven for about thirty minutes, give or take. Until the juices ran clear.

We then cooked off the sweet potato in a wok with some Fry Lite (got to be keeping the calories down!) We did the sweet potato first and then the carrot and courgette after. As this was a bit of a ‘try it and see’ recipe, we were winging it basically. We were right though, the potato did take longer than the carrots and courgettes. They took about ten to fifteen minutes in total. When they were evenly cooked, we put them in together and then warmed the Pesto through.

The chicken was done by this point so we sliced it up and dinner was served.

I really had no idea what to expect. But I tell you what, it was blimmin lovely. It was nice to eat something different. We love spaghetti as well as noodles, so are looking forward to seeing what other ideas we can come up with. I’ll have to start scouring the internet to see what other people are doing. We really enjoyed using the Spiralizer and think it’s a really fun way to get imaginative with your cooking – something we aren’t usually very good at!
